What if your stove could heat up faster, use less energy, and make your kitchen safer? That’s what induction cooking can do.

At a recent Energy Literacy Workshop at Columbia University, Pedro Barry, Director of Outreach at the Association for Energy Affordability, showed how induction stoves work — and why they’re a smart choice for your home.

What’s induction cooking?

Induction stoves use magnets to heat pots and pans. That means your food heats up fast, but the stovetop stays cool. It’s also safer, especially for homes with kids or older adults. 

Better for your bills — and your health

Induction cooking uses less energy than gas or electric stoves. It also helps reduce indoor air pollution, since it doesn’t burn gas. That’s better for your lungs and your budget.

Live demo: Boiling water, fast!

During the workshop, Barry showed how fast an induction stove can boil water — in just a few minutes. And even with the pot boiling, the surface around it stayed cool to the touch.

Important: use the right pan for induction cooking

Only some pots work on induction stoves. If a magnet sticks to the bottom of your pot, it’ll work. Learn more here.
